My brother-in-law just introduced me to this new fad – “salad in a jar”. It’s quickly becoming a favorite healthy meal option and it is so easy and convenient! The first step is to select your favorite veggies. I chose an orange pepper, radishes, grape tomatoes and carrots.

IMG_6340Choose your salad dressing or make something homemade. I chose to purchase a dressing this time – much easier. This Pear Gorgonzola dressing from Lighthouse is a delicious option. You can find it in the produce section of the supermarket, near the refrigerated items. Only 30 calories per 2 tablespoon serving, and very minimal ingredients.

IMG_6343Grab a mason jar and start adding your toppings, beginning with the dressing at the bottom…

IMG_6349Followed by your hard veggies – this way, the lettuce won’t get soggy from the dressing.

IMG_6362Select your greens and add them at the top. I chose a mixed field greens and spinach combo.


IMG_6366Shake it up, pour it out onto a plate and enjoy! This works great to pack for lunch ahead of time and transports easily and neatly.
