I mentioned on my About Me page that my husband is an amazing chef. He cooks most of my family’s meals and desserts are his specialty! This past weekend, I suggested his yummy creme brulee would make the perfect blog post. Not only is it delicious, it’s surprisingly easy to prepare. First, get your ingredients together – eggs, heavy whipping cream, sugar and vanilla.

Preheat the oven to 300 degrees.

Next, separate 6 egg yolks into a medium sized bowl.

In a separate medium sized bowl, pour in 2.5 cups of heavy whipping cream.

Microwave the heavy whipping cream for 4 minutes or until boiling.

While you’re waiting for the heavy whipping cream to boil, pour a 1/4 cup of sugar into the bowl with the egg yolks.

Next, add a 1/2 teaspoon of vanilla.

Whisk them up!

When the heavy whipping cream is boiling and bubbly, pour about 1/3 of the cream into the egg mixture. Stir to combine.

Next, immediately pour the egg mixture back into the remaining bowl of cream. Whisk until frothy.

Using a spoon, skim off the top layer of foam (several spoon fulls) and discard.

Grab your creme brulee ramekins. I bought these from World Market.

Pour the mixture into the ramekins so that it’s close to the top.

Perfect! Ready to bake…

Put the ramekins into a roaster and fill with hot water from the tap. The water should come to about the midway point of the ramekins.

Now bake for 30 – 35 minutes or until the mixture is softly set. To check, gently sway the roasting pan – if they shake like jelly, you’re golden. Don’t let them get too firm.

Now we’re ready for the fun stuff! Grab a blow torch, some caster sugar, and any other topping you heart desires. We desired powdered sugar and raspberries.

Sprinkle sugar over the top…

And gently tap the sides of the ramekin to evenly distribute the sugar. My hubby does a fantastic job!

Evenly caramelize the sugar using the blow torch. If you don’t have a blow torch, you can broil in the oven – just be very vigilant so that it doesn’t burn.

Now let’s pretty it up…

Dust a light sprinkling of powdered sugar…
